Oven Roasted Potatoes

Tasty side dish with meat.


  • 2 med. potatoes, white or gold, organic
  • 2 tsp. olive oil, extra virgin, unrefined and unfiltered, organic
  • 1/8 tsp. sea salt, unrefined and pure
  • 1 tbs. vinegar, balsamic, organic
  • 1/2 tsp. rosemary, dried, organic
  • 1/8 tsp. black pepper, ground, organic
  • 1/2 med. onion, any type, organic


Preheat oven to 450°F. Slice each potato lengthwise into 8 wedges. Toss potato wedges with oil, salt, rosemary, and pepper. Arrange in shallow baking pan. Roast potatoes for 12 minutes and turn over. Sprinkle sliced onion around the potatoes and bake for an additional 10-15 minutes, until golden brown. Sprinkle with balsamic vinegar and place back into the oven for 3 minutes until vinegar is evaporated.
