Tuna Curry

Quick easy dinner with an international flare.


  • 1 c. canned white tuna
  • 1/2 c. Greek yogurt
  • 1 c. green bell pepper
  • 1/4 c. onion
  • 1/2 tbs. coconut oil
  • 2 tsp. curry powder
  • 1 c. dried fruit
  • 1/2 c. brown rice
  • 1 c. water


Boil rice in water. Saute onion and green pepper in coconut oil in a medium saucepan. Add drained tuna. Add curry powder and stir. Stir in Greek yogurt and warm through. Serve over rice and garnish with fruit.
