Walnut Crusted Salmon

Salmon with a crunchy sweet coating of walnuts, honey, and spicy mustard

Ingredients

  • 1 lbs. salmon, fresh, wild-caught
  • 4 tsp. dijon mustard, organic
  • 4 tsp. honey, raw, unfiltered, organic
  • 2 slc. sprouted whole grain bread, from organic grains
  • 3 tbs. walnuts, raw, organic
  • 2 tsp. olive oil, extra virgin, unrefined and unfiltered, organic
  • 1/2 tsp. thyme, ground, organic

Directions

Place four 4-ounce salmon fillets on a greased baking sheet. Combine mustard and honey, and brush over salmon. Place bread in food processor and process to fine crumbs. Transfer crumbs to small bowl. Add the finely chopped walnuts, olive oil, and thyme; toss until mixed. Press walnut and bread crumb mixture onto coated salmon. Bake at 400ºF for 15-20 minutes or until fish flakes easily with a fork and topping is browned.
