Simple and delicious with a not-too-strong Southwestern flavor. Perfect for dinner, and the leftovers are great for lunch!
Place chicken between two sheets of plastic wrap and pound slightly.
Melt butter over medium high heat in skillet until sizzling. Add chicken and cook, turning once, until lightly browned, about 2 minutes per side.
Meanwhile, combine finely chopped onions, minced garlic, seeded and chopped jalapenos, chili powder, and cumin in a small bowl. Reduce heat to low. Add jalapeno mixture to skillet with chicken. Cover and cook for 12 minutes, until chicken is no longer pink.
While chicken is cooking, combine chopped tomato and chopped avocado in a small bowl. Drizzle lime juice over it, and mix lightly.
When chicken is cooked through, move to a serving plate. Spoon onion, garlic, and jalapeno mixture on top of chicken. Then top chicken with avocado and tomato mixture. Enjoy!
