Healthy Monster Cookie

I was in a mad craving for something sweet and looked up monster cookies.... drooling at the pictures I came up with my own BD-friendly monster cookie. And they were AWESOME!!!


  • 3/4 c. almond butter, organic, raw
  • 1 c. coconut sugar, organic
  • 4 tbs. olive oil, extra virgin, unrefined and unfiltered, organic
  • 2 egg, omega-3, cage-free, organic
  • 1/2 tbs. vanilla extract, organic
  • 1/2 tbs. cinnamon, ground, organic
  • 2 1/4 c. oats, whole, dry, organic
  • 1 tsp. baking soda, pure
  • 1/2 c. cranberries, dried, organic
  • 1/2 c. almonds, slivered, organic, raw


Preheat oven to 350°F. Combine all the dry ingredients in one bowl: coconut sugar, cinnamon, oats, baking soda, cranberries, and almonds. Then combine the wet ingredients in another bowl: almond butter, olive oil, eggs, and vanilla. Combine the two mixtures and fold the ingredients together. Scoop the dough onto a baking sheet lined with parchment paper. You should make approximately 20 cookies. (I use a 1/8 cup measuring cup to portion them out.) Bake for 7-10 minutes, until golden brown and slightly crispy. ENJOY!! One serving is two cookies.
