I found this recipe on Since I'm new to this, I'm not completely positive about the serving sizes, but the ingredients are all carbs and you can make the dressing separately and add it accordingly in the serving size you require which is how I've done it.

  • 3 c. water, purified
  • 1/2 c. rice, long grain & wild, organic
  • 1 c. quinoa, white, organic
  • 1/2 c. green onion, fresh, organic
  • 1/2 c. bell pepper, red, fresh, organic
  • 1/2 c. cucumber, fresh, organic
  • 2 tbs. coconut oil, raw, extra-virgin, organic
  • 2 vinegar, balsamic, organic
  • 1 tsp. dijon mustard, organic
  • 1/2 tsp. sea salt, unrefined and pure
  • 1/2 tsp. thyme, dried, organic
  • 1/4 tsp. rosemary, dried, organic
  • 1/4 tsp. black pepper, ground, organic
  • 2 garlic, fresh, organic

  1. Combine 1 cup water and wild rice in a medium saucepan; bring to a boil.
  2. Cover, reduce heat, and simmer for 1 hour or until the rice is tender and the liquid is absorbed.
  3. Combine 2 cups water and quinoa in a medium saucepan/ bring to a boil.
  4. Cover, reduce heat and simmer 20 minute or until liquid is absorbed.
  5. Remove from heat; fluff with a fork.
  6. Place quinoa and wild rice in a large bowl.
  7. Stir in green onions, bell pepper and cucumber.
  8. Combine oil and remaining ingredients in a small bowl, stirring with a whisk.
  9. Drizzle over quinoa mixture; toss gently to coat. Cover and chill at least 2 hours.
