Delicious creamy pesto sauce over a variety of steamed vegetables and rice pasta.


  • 1 c. walnuts, raw, organic
  • 4 c. spinach, fresh, organic
  • 1 c. cheese, parmesan, raw, organic
  • 3/4 c. cheese, gruyere, raw, grass-fed or pastured, organic
  • 1/4 c. olive oil, extra virgin, unrefined and unfiltered, organic
  • 4 clove garlic, fresh, organic
  • 1 tsp. basil, fresh, organic
  • 1 tsp. oregano, fresh, organic
  • 1 coconut milk, unsweetened, full-fat, organic, canned
  • 1 pkg. pasta, penne, brown rice, organic
  • 2 c. carrot, fresh, organic
  • 2 c. zucchini, fresh, organic
  • 1/2 head cauliflower, fresh, organic


1) Cook pasta per directions. 2) Steam julienned carrots, zucchini, and cauliflower approx 7 minutes. 3) Combine half of the ingredients from spinach through coconut milk and blend in a food processor. 5) Remove to a container and repeat with second half of spinach through coconut milk ingredients. 6) Combine pasta, vegetables, and sauce.
