Breakfast Skillet

A nice quick breakfast skillet than gives a variety of carbs, and an easy way to "poach" an egg.


  • 1/4 c. onion, any type, organic
  • 1/2 c. mushrooms, white, organic
  • 1 c. spinach, fresh, organic
  • 1/4 c. tomatoes, diced, fresh, organic
  • 1 sausage, turkey, Italian-style, free-range, organic
  • 1 egg, omega-3, cage-free, organic
  • 1 tsp. coconut oil, raw, extra-virgin, organic


Saute onions and mushrooms about 2 minutes until softened and browning, add turkey sausage, saute one minute. Add tomato and spinach on top. Then crack egg on top, cover with a lid. The moisture from spinach and tomato will poach the egg. When egg is done, lift with spatula and season with salt and pepper to taste.
