Quick, easy, and filling and perfect for someone with a protein metabolism to fit into their plan.
Place all ingredients in a nice big skillet. Cook on medium to high heat until sausage is browned and veggies are tender. Serve.
I always keep a jar (I like to keep things in glass) of fresh chopped veggies (anything that is currently available in my area) on hand in the fridge so it's handy for a quick meal. I just poured out 3/4 of a cup, and voila', my veggies were in the pan.
Also, whenever I roast something, I always throw some potatoes in the oven to bake along with whatever I'm roasting in the oven so the potatoes are cooked (or at least partially cooked) so they are ready to use when I need something quick.
I used a lot of garlic in this one, and was concerned how that would mix with the coconut oil and I actually loved the end result. Even hubby, who snuck a bite, said, "Wow, that's really good. Can I have some? And I had to make a whole extra serving just for him. And he always says he doesn't like that diet kind of stuff! :o)
