a wonderful fresh shaved ice type dessert. sweet and decadent but only 1 ingredient! i served mine in my measuring cup to make sure i wouldnt over indulge on this one!

  • 1 c. coconut cream
  • 1 watermelon, fresh, organic

cut rind off of desired amount of watermelon. cut into chunks and put in a blender or food processor. process until completely smooth and watery. pour into flat freezer safe container and freeze until solid. (i left mine over night) remove from freezer and use a fork to shave the ice. just repeatedly pull the fork towards you its very easy. scoop up shavings and eat, serve with whipped coconut cream or greek yogurt if you want some added protein. but its wonderful just by itself!
