Nice alternative to wheat flour biscuits.

  • 2 c. flour, spelt, whole-grain, organic
  • 1 tbs. baking powder, organic, gluten & aluminum-free
  • 1 tsp. sea salt, unrefined and pure
  • 6 tbs. butter, unsalted, organic, raw or unpasteurized, grass-fed/pastured
  • 2/3 c. milk, full-fat, raw, grass-fed or pastured cows, organic

Preheat oven to 450 degrees F (220 degrees C). In a large bowl, stir together the flour, baking powder and salt. Cut in the butter until the mixture resembles coarse crumbs. Gradually stir in milk until dough pulls away from the sides of the bowl. You may need to adjust the amount of milk. Pat out on a floured surface to about 1 inch thick. Cut into biscuits and place on a baking sheet. Bake in the preheated oven for 12 to 15 minutes, until the bottoms are golden brown.

*Note - I've not tried it, but you could possibly substitute coconut oil for the butter, but I think you would want it firm not liquid so if you want to try that, you'd need to put the coconut oil in the frig until it's firm. You could also probably substitute a different type of milk - coconut, almond, oat, rice, etc. for the milk.
