Chicken "coleslaw" salad

I've been eating this for lunch the last few days - it's quick and filling and I can use up leftover chicken. Also great with tuna. If you want a bigger bowl just add more lettuce (it's 'free').


  • 3/4 c. cabbage
  • 1/2 c. lettuce
  • 1/4 c. carrot
  • 1/2 red apple
  • 2 oz. cooked chicken
  • 2 Greek yogurt
  • 1 tbs. apple cider vinegar
  • 1 tsp. honey, raw
  • 1 cilantro


Mix the yogurt, vinegar and honey well in a small bowl. Toss all other ingredients into a bowl. Toss with dressing and enjoy. This doesn't have any fat in it but is also good with a 1/4 avocado or an oz of chopped cheese thrown in for a complete 3/2/1 meal in a bowl. Adjust according to your 'type'.
