Summer Sausage Ratatouille

Delicious mix of sausage and veggies. Healthy and satisfying!


  • 4 sausage, chicken, Italian-style, free-range, organic
  • 3 med. zucchini, fresh, organic
  • 1 med. onion, any type, organic
  • 1 med. eggplant, fresh, organic
  • 2 chili pepper, banana, fresh, organic
  • sea salt, unrefined, & fresh ground pepper, organic to taste
  • 2 med. tomatoes, red, fresh, organic
  • 1 tbs. garlic, fresh, organic


Slice the sausages and cook in a large skillet over medium or medium-high heat for 3-4 minutes. Add chopped garlic and chopped onion; saute for 3 minutes. Add zucchini (cut in half lengthwise, then sliced into half moon shapes), eggplant (peeled and chopped), banana peppers (seeded and chopped), and tomatoes (chopped). Cook uncovered for 5-7 minutes, until all veggies are crisp tender and most of the tomato liquid has been absorbed. Season with salt and pepper, and serve.
