These fluffy, flour-less, muffins have the perfect balance of banana, sweetness, and oats. Please enjoy :)
Adjust oven rack to middle position and preheat to 400ºF. Line 12 muffin tins with paper baking cups.
In a medium bowl, whisk eggs. Add mashed ripe bananas, Greek yogurt, and vanilla. Mix to combine. In a separate large bowl, mix together all dry ingredients (oats, coconut sugar, cinnamon, baking powder, and baking soda). Fold wet into dry. DO NOT OVERMIX.
Spoon batter into baking cups. Bake for 15-20 minutes. Turn pan halfway through baking (to ensure even cooking). Let rest in pan for 10 minutes. Serve.
