Quinoa Pine Nut Salad

Quick and delicious salad


  • 1/4 c. quinoa, white, organic
  • 1/2 c. water, purified
  • 1/4 c. raisins, organic
  • 1 1/2 oz. pine nuts, raw, organic
  • 1 chives, fresh, organic
  • parsley, fresh, organic to taste
  • 1 tsp. olive oil, extra virgin, unrefined and unfiltered, organic
  • 1 pinch coriander, ground, organic
  • 1 pinch cumin powder, organic
  • 1 pinch cayenne pepper, powder, organic


Rinse quinoa and put in pot with water. Bring to boil. Cover and reduce heat. Cook for 15 minutes. Turn off heat and allow to steam for 5 minutes. Fluff with fork.

In the meantime, chop parsley and chives. Warm olive oil in small pan. Add cumin, coriander and cayenne. Warm until the spices release their fragrance. Remove from heat.

Toss oil, raisins, pine nuts, parsley, chives and quinoa together. Eat while warm.
