These protein packed, gluten free, vegan friendly, low sugar balls are akin to ''dressed up'' trail mix. These are great for a snack or served as a dessert.
Process all but the dates in a food processor. Add dates, process until mixture begins to form a ball; you may need to add water to help this along, especially if you use dried dates. Form into large cherry sized balls and roll in either coconut, hemp hearts, chia seeds, salba or any chopped seed or nut of your choice and refrigerate or freeze in airtight containers. Makes up to 32 balls
