Crisp and Fluffy Pumpkin Waffles

The perfect pumpkin waffles! Light, fluffy, and just enough crisp.


  • 3/4 c. flour, oat, organic
  • 1 tsp. baking powder, aluminum-free
  • 1 tbs. coconut sugar, organic
  • 1 tsp. cinnamon, ground, organic
  • 1/2 tsp. ginger, ground, organic
  • 1/4 tsp. nutmeg, organic
  • 1/4 tsp. ground allspice, organic
  • 1 egg, omega-3, cage-free, organic
  • 1/2 c. coconut milk, unsweetened, full-fat, organic, canned
  • 1/2 c. pumpkin puree, 100% pure, canned, organic
  • 1 tbs. coconut oil, raw, extra-virgin, organic


Preheat open waffle iron to medium-high heat.

Mix oat flour, baking powder, coconut sugar, cinnamon, ginger, nutmeg, and allspice in a medium bowl. Whisk together egg, coconut milk, pumpkin puree, and melted coconut oil in a separate medium bowl. Add wet ingredients to dry ingredients, and mix well. If mixture is too thick, add one tablespoon of coconut milk at a time until it reaches desired consistency.

Pour batter evenly onto waffle iron. Cook for 5-8 minutes, depending on waffle machine and how crispy you like your waffles. Serve with raw honey, fresh berries, maple syrup, or coconut butter. Enjoy!
