My sister buys Bliss Balls from a place called Sweet Cherubim in Vancouver. This is her adaptation. they are delicious chocolatey and only full of good things! you have to try these especially if your craving a chocolate cookie!

  • 1 c. coconut oil, raw, extra-virgin, organic
  • 3/4 c. honey, raw, unfiltered, organic
  • 1/2 c. applesauce, no sugar added, organic
  • 1/2 c. cacao powder, raw, organic
  • 1 1/2 c. almond meal, organic
  • 1 c. date, organic
  • 3/4 c. pumpkin seeds or pepitas, organic
  • 1/2 c. sunflower seeds, raw, unsalted, organic
  • 1 tsp. chia seeds, organic

Mix coconut oil, honey, applesauce, and cacao powder in a bowl. In a food processor process pumpkin seeds, sunflower seeds, and chia seeds. Add grounds seeds and ground almonds to oil mixture. Process dates to a mush, and add them to the mixture. Stir together. You may need to add more ground almonds to get a good texture, so you can roll the dough into balls (it'll still be a bit sticky). Roll into balls and bake on a cookie sheet at 325ºF for 13-15 minutes until they are no longer shiny. These are great just out of the oven but are also really delicious cooled or even out of the fridge! Makes 42 balls; serving size is 2 balls.
