Curried Chicken Salad

This is protein to the max!! This recipe uses greek yogurt instead of mayo!

Ingredients

  • 2 carrot
  • 1 c. walnuts
  • 1/2 c. dried cranberries
  • 1/3 c. Greek yogurt
  • 1 tbs. lemon juice
  • 1/2 tbs. apple cider vinegar
  • 1 tbs. extra virgin olive oil
  • 1 tsp. curry powder
  • 1 tsp. chili powder
  • 1 tsp. garlic powder
  • 1 tsp. ground cumin
  • 2 chicken breast, skin-on
  • 2 celery stalk, fresh, organic

Directions

Combine wet ingredients with the seasonings (to taste) and then add in dry ingredients. Chill in fridge and eat with lettuce wraps or seasoned potatoes. Soooo yummy!
