Quinoa Patties

I adapted this reciepe to BD from "Super Natural Everyday". These patties were so good and VERY filling. I have never been a big fan of quinoa but surely am now!

Ingredients

  • 2 1/2 c. white quinoa
  • 4 lrg. egg
  • 1/3 c. chives, fresh, organic
  • 1 sml. onion
  • 1/3 c. parmesan cheese
  • 1 clove garlic
  • 1 c. breadcrumbs, made from sprouted whole-grain bread
  • 1 coconut oil
  • 1/2 tsp. sea salt
  • black pepper to taste

Directions

Combine the cooked quinoa, eggs and the salt in a large bowl. Stir in chives, onion, cheese and garlic. Add bread crumbs to the mixture and allow to sit for a few minutes so the bread crumbs can soak up the mixture. Form into 12 small patties. Heat the coconut oil (about 1 tsp) in a large skillet on medium heat. Add 6 of the patties, cover and cook for 7-10 min. Flip and cook for 7 min more or until both sides are browned. Remove patties and repeat with remaining 6 patties. Serving size is 2 patties.

This may count as 1/2 P because of the eggs.
