honey rhubarb compote


  • 6 c. rhubarb, fresh, organic
  • 1 red apple
  • 1/2 c. orange juice
  • 1/2 c. honey, raw


Chop rhubarb and apple into dime size pieces. Add to a heavy bottomed sauce pan with orange juice and honey. Bring to slow boil, then cover and simmer for about 5-7 min. Remove from heat and let cool. Compote will thicken as it cools. Serve warm topped with coconut milk. Can also be served as a topping for vanilla ice cream.
