Cajun Jambalaya

A dark, richly spicy jambalaya that's quick and easy to prepare


  • 1 c. black beans, cooked
  • 1 c. white mushrooms
  • 1 c. zucchini
  • 1 tsp. oregano, ground, organic
  • 1 tsp. black pepper
  • 1/2 tsp. dried thyme
  • 4 pork sausage
  • 1 c. diced tomatoes, canned


brown sausages in coconut oil then remove from pan, slice & set aside. Add butter to hot pan and saute mushrooms, garlic and zucchini until golden. Add tomatoes, black beans, hot water and spices and stir well, scraping up any brown bits from the bottom of the pan. Add sausages back to the pan, stir in, cover and simmer for 20 minutes until hot and bubbly. Turn up the heat a bit so liquid boils down by about half (f it gets too dry, you can add more hot water).

WARNING: This is very spicy! If you aren't fond of hot spicy food, cut the pepper & red pepper flakes to 1/4 tsp each. But if you like spicy food, you might want this to be the meal you have with your weekly glass of red wine!
