A good hearty meal.
Chop and grind potato pieces (washed and unpeeled) with diced onion in a chopper/grinder.
Mix in a bowl with egg, flour, bacon bits, salt and pepper, and coconut oil.
Spoon into skillet coated with coconut oil (5 or 6 pancakes).
Flip when brown...serve with Greek yogurt.
