Although I'm not really keen on fish, I love these fishcakes! The sweetness of the potato and salmon compliment each other perfectly and the additional spice adds a nice 'kick'. I hope you agree :)
Cook the salmon - grill or steam is best. Dice the sweet potato and gently bring to boil. Ensure that you don't overcook or potato will become too mushy - 10 minutes should do it. Once softened, use a fork to roughly mash the potato and add cooked salmon flakes. Add the curry paste (or substitute chili powder) to taste and gently mix. Using your hands, gently manipulate the mixture into patties. Heat a little butter in a pan and cook the fishcakes on high, flipping them regularly to ensure that they don't burn. Serve with spinach or similar greens.
