These muffins are gluten-free, moist, and delicious!
Preheat oven to 350°F. Grease 12 cups of a muffin pan or line with cupcake liners.
Combine all dry ingredients (oats, cacao powder, sea salt, baking powder, and baking soda) in a bowl.
In a separate bowl, combine all wet ingredients (honey, applesauce, Greek yogurt, apple cider vinegar, vanilla extract, egg whites, and hot water).
Add dry ingredients to wet ingredients, mix well, and let sit for 5 minutes.
Divide batter among 12 cups of a muffin pan. Bake for 12 minutes.
