Fluffy Banana Bread

I've been experimenting for a while now, trying to get a good balance of different flours. This is a very fluffy, tasty bread. VERY hard to stick to just one serving. :)

Ingredients

  • 1/2 c. butter, unsalted, organic, raw or unpasteurized, grass-fed/pastured
  • 4 egg, omega-3, cage-free, organic
  • 2 tsp. vanilla extract, organic
  • 1/2 c. coconut sugar, organic
  • 2 banana, fresh, organic
  • 1 1/4 c. water, purified
  • 1 c. flour, brown rice, organic
  • 1/4 c. flour, buckwheat, whole-grain, organic
  • 1/4 c. coconut flour, organic
  • 1/2 c. oats, old fashioned rolled, dry, organic
  • 1/2 c. chia seeds, organic
  • 1 1/2 tbs. baking powder, aluminum-free
  • 1/2 c. walnuts, raw, organic

Directions

Preheat oven to 300°F. Combine eggs, melted butter, vanilla, and coconut sugar; mix well. In a blender, mix bananas and hot water. Combine with egg mixture. Add the rest of the ingredients, and mix by hand until just blended (don't overmix). Pour into greased 8x8 pan. Bake for one hour.
