Spinach Quiche

A delicious, healthy crustless spinach quiche.


  • 1 c. water, purified
  • 1/4 c. flour, brown rice, organic
  • 1/2 pkg. spinach, frozen, organic
  • 6 egg, omega-3, cage-free, organic
  • 1/2 med. onion, any type, organic
  • 1/2 c. bell pepper, red, fresh, organic
  • 1/2 tsp. nutmeg, organic
  • 1/2 tsp. sea salt, unrefined and pure
  • 1/4 tsp. black pepper, ground, organic
  • 4 oz. cottage cheese, full-fat, raw, grass-fed or pastured, organic
  • 2 oz. cheddar cheese, mild, raw, organic
  • 6 slc. tomatoes, red, fresh, organic


in a bowl combine the eggs, milk (or water), and rice flour. add salt, pepper and nutmeg. add spinach, cottage cheese, onion, and pepper. pour into greased (olive or coconut oil) pie pan, and top with sliced cheddar cheese and tomato slices. bake at 350 for 30-40 min. test with knife in center to check for doneness.
