A delicious, healthy crustless spinach quiche.
in a bowl combine the eggs, milk (or water), and rice flour. add salt, pepper and nutmeg. add spinach, cottage cheese, onion, and pepper. pour into greased (olive or coconut oil) pie pan, and top with sliced cheddar cheese and tomato slices. bake at 350 for 30-40 min. test with knife in center to check for doneness.
