Add spinach, cooked quinoa, and minced garlic to the pan. Season with salt and pepper, and fry until spinach is wilted.
Heat oil in a pan. Add eggs to the pan, and fry however you like them.
Serve eggs over spinach-quinoa-garlic mix. Enjoy!
