very tasty, the kids didn't like the mango sauce but my husband and I loved it! the nice thing about my kids they scraped it off and ate the chicken :) I don't think the olive oil amount is enough to add up to a fat. depending on how much of the sauce you put on your chicken, and the chicken breast I had was 6 ounces.
preheat oven to 375 degrees
in saucepan put in olive oil and saute onions, garlic, habenero pepper. add mangoes and vinegar cook sauce over low heat for 15 minutes.
salt chicken breasts and put in baking dish pour sauce over and bake til chicken is no longer pink in middle
serve with wild rice and steamed green beans. (add the carbs to the number above)
