Easy to put together the night before in crock pot--just bring out of frig and put in cooker the next morning to have for dinner.....or cook overnight to have for lunch the next day!! This makes enough chicken to use for a meal and have left over chicken for salads, casseroles, etc.
Whisk together vinegar, parsley, olive oil, salt and pepper. Place chicken breast in the crockpot. Pour oil and vinegar mixture over chicken. Cook on low for 6-8 hours or high for 4-6 hours.
Remove chicken and pour marinade into a measuring cup or bowl. Place the marinade in the fridge to cool and skim off any fat that floats to the top. Shred the chicken when cooled. Chicken should fall off the bones so be careful of small bones in the chicken and marinade. Pour marinade over the shredded chicken.
