Found this on Healthy Blender Recipes.com Really good. I ran some fresh fruit, lemon juice and a dash of raw honey through my Ninja Blender and used that instead of syrup.
Mix wet ingredients (eggs, banana, vanilla and coconut milk) in your blender for 30 seconds. Add dry ingredients and mix until smooth. If you prefer thinner pancakes add more milk.
Heat Coconut oil on MED-LOW. Add pancake and cook 3-4 min. on each side until brown. (I cooked the first one on MED and then realized why the recipe called for MED-LOW.)
My pan is large enough for one large pancake, so I cooked one at a time and kept the others warm in the oven while I was cooking. It made 4 large pancakes.
