Spaghetti Squash Taco Salad

Very pleased with how well the flavors blended. Spaghetti Squash is truly a universal dish between all styles of cooking because it absorbs the flavor of what ever you're cooking. Major hit in this house!


  • 1 sml. squash, spaghetti, fresh, organic
  • 1 onion, any type, organic
  • 1 bell pepper, red, fresh, organic
  • garlic powder, organic to taste
  • 1 lbs. beef, ground, free-range or grass-fed, organic
  • 1/2 c. cheese, shredded, any type, raw, organic
  • 1 tomatoes, diced, fresh, organic
  • 1/2 water, purified
  • 1 cilantro, bunch, fresh, organic


Cut spaghetti squash in half and place in baking dish with 1/2 cup water. Bake at 375 for 30 min. Mean while brown ground beef over med high heat. Drain.

Return to pan and Add diced onion and red bell pepper and cook til onion is clear. Add Cayenne pepper,chilli powder, garlic powder, and cumin to taste and let simmer 3 min

Take a fork and shred the spaghetti squash noodles onto plates, top with meat mixture, sprinkle with cheese and diced tomatoes. add cilantro garnish and serve!
