This is a little tweaked on the other one that uses honey and it is so delicious!
Mix syrup, coconut oil, cinnamon and cocoa powder in a sauce pan. Heat until boiling, stirring constantly. Soft boil for 3 minutes. Remove from heat. Add vanilla and peanut butter and stir well. Stir in coconut.
Drop by spoonfuls onto cookie sheet lined with foil or wax paper and "smush" until flat and sort of round. Put in refrigerator to cool for about 1 hour, then transfer to airtight container. Will keep in the refrigerator for a couple of weeks.
Makes 6 large cookies or 12 decent size cookies.
Recipe is easily doubled or tripled for large batches.
