A delicious summer salsa variation! Tastes great served over pork chops, chicken, or fish.
Finely chop pitted cherries, onion, and tomato. Toss in a bowl with sea salt, ground black pepper, and freshly grated ginger. (Another option is to combine all ingredients in a food processor and pulse until ingredients are chopped as finely as you'd like.) Chill until ready to serve.
