Couldn't sleep last night so I decided to work on some recipes. I made these muffins and surprised the family with them for breakfast. They all loved them!
Preheat your oven to 400ºF. Prepare muffin tins by lightly greasing and lining 12 muffin cups.
In a food processor or blender, pulverize the oats for 1 minute. It should look like rough cornmeal when you're done. Transfer the oats to a big bowl and add spelt flour, baking powder, salt, cinnamon, and ginger. Whisk together and set aside.
In a small bowl, beat the eggs until fluffy and then beat in the vanilla extract, coconut sugar, and coconut oil. (You could do this in your food processor or blender if you'd like.)
Pour egg mixture into the dry ingredients and fold in. Once combined, also fold in the grated carrots, peeled and grated apple, and the raisins.
Divide the batter between the 12 muffin cups. Bake for 25 minutes or until a toothpick comes out clean. Cool on a rack.
Play with the spices to find what tastes perfect for you. The same with the sugar...you might want more or less. Less carrots, more apple...whatever works for you!
