Chicken Salad with Green Olives

Makes 6-8 small servings. Tonight no one wanted a big dinner and I had wanted to make some chicken salad. I had this in a lettuce wrap, the kids and husband had theirs in tortillas and we all loved it!! :-)


  • 2 tsp. olive juice, jar, organic
  • 2 tsp. lemon juice, pure, organic
  • 1 tsp. dijon mustard, organic
  • 1/3 c. mayonnaise, homemade, organic
  • 1 tsp. celery seed, organic
  • sea salt, unrefined, & fresh ground pepper, organic to taste
  • 1 c. olives, Spanish manzanilla, organic
  • 3 c. chicken, cooked, free-range, organic
  • 1 c. celery, fresh, organic
  • 1/2 c. green onion, fresh, organic
  • 1/3 c. yogurt, greek, plain, full-fat, plain, organic


Shred or chop enough chicken to make 3 cups. Slice olives and green onions. Chop celery.

Combine mayonnaise, yogurt, green olive brine, lemon juice, Dijon mustard, celery seed (optional), pepper, and sea salt (I didn't use much salt because of the olives). Mix well.

In a medium sized bowl, combine chicken pieces, diced celery, and sliced green onions. Stir in enough of the dressing to moisten all the ingredients. (You may not need all the dressing!) Then, gently fold in green olives, mixing just enough to combine.

Serve immediately or put in a covered bowl in the refrigerator (will keep for a few days).

Makes 6-8 small servings.
