Italian Style Kale Salad

Kale is a very nutritious vegetable, and this salad is delicious!


  • 2 c. kale, any variety, fresh, organic
  • 1 1/2 tbs. olive oil, extra virgin, unrefined and unfiltered, organic
  • 1 tbs. lemon juice, pure, organic
  • 1 clove garlic, fresh, organic
  • sea salt, unrefined and pure to taste
  • red pepper flakes, crushed, organic to taste
  • black pepper, ground, organic to taste
  • 2 tbs. cheese, parmesan, raw, organic


Wash kale, remove ribs, and tear leaves into bite-sized pieces.

Whisk together olive oil, lemon juice, minced garlic, sea salt, black pepper, and red pepper flakes.

Toss dressing with kale until all leaves are evenly coated. Let sit for 5 minutes.

Add Parmesan cheese, and toss again. Let sit for another 5 minutes before serving.
