Chicken Asparagus Soup

This is a filling soup I made up with veggies and chicken This would also taste good over some brown rice pasta.

Ingredients

  • 2 tbs. coconut oil, raw, extra-virgin, organic
  • 1 lbs. chicken breast, skinless, organic, free-range
  • 1 bch. asparagus, fresh, organic
  • 2 c. tomato sauce, organic
  • 1/2 c. yogurt, greek, plain, full-fat, plain, organic
  • 7 mushrooms, white, organic
  • sea salt, unrefined, & fresh ground pepper, organic to taste

Directions

Cut chicken breast into bite-sized pieces.

Heat coconut oil in pan, over medium high heat. Add chicken pieces to the pan.

Cut asparagus and mushrooms. Add to chicken and coconut oil. Start sauteeing.

When the chicken is cooked, add tomato sauce. Then add yogurt, salt, and pepper.

Let simmer for a few minutes before serving.
