Fun twist to a chocolate chip cookie with all the same flavor.
Preheat oven to 350°F. Line a baking sheet with parchment paper. Combine flour, salt, baking soda, and cinnamon in a bowl. In another bowl, combine melted butter, honey, and vanilla. Whisk together. Add eggs one at a time, whisking after each addition. Stir wet ingredients into dry ingredients until thoroughly combined. Fold in carob chips. Refrigerate dough for 20 minutes (preferred but okay if not refrigerated). Roll about a tablespoon of mixture into a ball and place on lined baking sheet. Repeat until all mixture is used up. Makes 12-16 cookies. Bake 7-10 minutes until lightly golden.
