Cheesy Cauliflower "Hashbrowns"

Tasty, cheesy cauliflower side dish!

Ingredients

  • 6 c. cauliflower, fresh, organic
  • 6 oz. cheddar cheese, mild, raw, organic
  • 4 green onion, fresh, organic
  • 3 pce. bacon, uncured, nitrate-free, organic, pastured
  • 6 oz. yogurt, greek, plain, full-fat, plain, organic
  • sea salt, unrefined, & fresh ground pepper, organic to taste

Directions

Preheat oven to 350ºF. Grease a baking dish with butter.

Cut cauliflower into florets, cook, drain, and chop into small pieces (like hashbrowns).

Cook bacon until it's crisp, let cool, and crumble.

Combine cauliflower, sliced green onions, and crumbled bacon. Add Greek yogurt, cheese, salt, and pepper. Mix until blended. Move mixture to baking dish, and bake for 20-25 minutes, until hot and bubbly. Let stand for a few minutes before serving.
