Thanks to our lovely member Yun who asked about how to crystallize ginger, we now have a new free sweet which is good for our digestion, may kill morning sickness, and cleans our teeth! It is irresistible together with macademia nuts!

  • 1 water, purified
  • 1 lbs. ginger, fresh, organic
  • 3/4 c. coconut sugar, organic

Bring 1 gallon of water to boil. Peel 1 lbs fresh ginger (3 large roots). Cut the ginger carefully into thin pieces, but not super thin. Add the ginger to the water and boil for 40 minutes. (If you change the water once, the taste of the ginger will be less strong.) Move the ginger from the water to a skillet. Add 3/4 C Xylitol to the ginger in the skillet. Add 1/4 C of the ginger "tea" to the skillet. Boil the ginger with the Xylitol until all the water has disappeared. Dry the ginger on a cooking sheet in the oven at 180 F until it's dry if needed. Store in fridge. I don't know if it's necessary with refrigeration, but I like them cold. :-)

This is an altered recipe from something I found online. They used much less water and 1 lb real sugar, and with less water the taste was so strong my tears ran. Made this way, the ginger slices can be used as sweets by themselves and together with nuts in snack meals. (macademia nuts are my favorites) Since I get such a clean feeling in my mouth from the Xylitol I'll also incorporate them with my snacks when I travel.
