Macaroni "Lasagna"

This is kinda like Hamburger Helper, but without the ground beef. Now you Could add that of course! This is a QUICK and easy meal/side dish to make & the kids LOVED it!

Ingredients

  • 15 oz. tomato sauce
  • 1/4 tsp. garlic
  • 1 tsp. Italian seasoning
  • 1 tsp. fresh parsley
  • 1/4 tsp. black pepper
  • sea salt to taste
  • 1 c. cottage cheese
  • 1 1/2 c. mozzarella cheese
  • 1/4 c. parmesan cheese
  • 2 c. brown rice pasta

Directions

Spray a bit of olive oil into a large skillet. Then add the tomato sauce, garlic, Italian seasoning, parsley flakes, and black pepper (and sea salt if desired). Bring mixture to a boil. Add cottage cheese, 1 cup of the mozzarella cheese and the Parmesan cheese. Mix well to combine. Continue cooking for 5 minutes or until the cheeses begin to melt. Stir often! Stir in macaroni. Evenly sprinkle remaining 1/2 cup mozzarella cheese over top. Lower heat, cover and simmer for 5 minutes or until mozzarella cheese melts. Divide into 4 (1 cup) servings.

Please don't over cook your pasta or it will get mushy. Better to have it be a bit under done since it will still continue to cook a bit in with the cheese.*

You could add ground beef or turkey to this and make it like the Hamburger Helper. I just wanted to try this without meat first and it was so good! The kids loved it and since we had grilled fresh good burgers on the grill, this was a nice side to go with it. And a small salad. Husband liked it a lot, but the kids Loved it! Hope you will, too.:)
