Chocolate Cookie Brownie

This is a chocolate cookie that is more like a brownie. Most of the ingredients are a free food and this really satisfies my chocolate craving! About 4 cookies per serving.

Ingredients

  • 1/4 c. coconut flour, organic
  • 1/4 c. coconut oil, raw, extra-virgin, organic
  • 1/3 c. cacao powder, raw, organic
  • 3 egg, omega-3, cage-free, organic
  • 1/3 c. coconut sugar, organic
  • 1/2 tsp. vanilla extract, organic
  • 1/4 tsp. sea salt, unrefined and pure

Directions

In a saucepan at low heat, melt oil and stir in cocoa powder. Remove from heat and let cool. In a bowl, combine eggs, salt, vanilla, and coconut sugar. Stir in cocoa mixture. Whisk coconut flour into batter until there are no lumps. Let batter rest for 4 to 5 minutes to allow it to thicken slightly. Drop batter by the spoonful on greased cookie sheet. Bake at 175 Degree C (350F) for 14 minutes. Makes about 16 cookies. The cookies will have consistency of a brownie. Yummy!
