My good friend sent me this recipe a few years back, I tweaked it for Beyond Diet, and my whole family loves it!
Cook the macaroni (brown rice pasta, quinoa pasta, etc.) according to the package directions - be careful not to overcook or it will become mushy. When done, drain off water and rinse in cold water to chill the macaroni.
In a large bowl, combine the cooked and cooled macaroni, seeded and chopped tomato, seeded and diced bell pepper (optional but my family loves the sweet peppers), peas, chopped celery, sliced green onions, cheese, and chopped hard-boiled egg.
Prepare the dressing: In a small bowl, combine the mayonnaise, yogurt, honey, mustard, and celery seed. Mix well.
Pour the dressing over the macaroni mixture and toss well to coat. Sprinkle with a bit of paprika (optional). Cover and refrigerate until ready to serve.
This is so fast and easy to make! The next time I make it I'm going to add some chopped cooked chicken to it and then it could a meal and not just a side. I hope you'll enjoy this as much as we do!
