Powerful Egg Scramble

This egg recipe can be eaten for breakfast, lunch or dinner. Just pair with whatever meat you prefer for a great meal. It is a great way to get more vegetables into your meals.


  • 4 egg, omega-3, cage-free, organic
  • 1/4 onion, any type, organic
  • 1/2 tomatoes, roma, fresh, organic
  • 1 hndfl. mushrooms, white, organic
  • 2 c. spinach, fresh, organic
  • 1 tsp. turmeric, ground, organic
  • 1 tsp. flax seeds, ground or meal, organic
  • 1/2 tsp. ginger, fresh, organic
  • 1/2 tsp. garlic powder, organic
  • sea salt, unrefined, & fresh ground pepper, organic to taste
  • 1 tbs. coconut oil, raw, extra-virgin, organic


Melt some coconut oil about 1 tbsp or more in skillet. Saute onion and mushrooms. Add tomato and spices. Add spinach. Cook until wilted. Add eggs and stir into veggies. Cook until desired doneness.
