This egg recipe can be eaten for breakfast, lunch or dinner. Just pair with whatever meat you prefer for a great meal. It is a great way to get more vegetables into your meals.
Melt some coconut oil about 1 tbsp or more in skillet. Saute onion and mushrooms. Add tomato and spices. Add spinach. Cook until wilted. Add eggs and stir into veggies. Cook until desired doneness.
