These are delicious for lunch or an anytime snack. Spread a little butter on warm muffins - mmmmmm! Freeze the rest and heat them up as you need them.
Beat cream and eggs together. Sift in flour, baking powder and salt and pepper to taste. Put onion, cheese, bacon or ham, pineapple and parsley and chives on top of flour. Gently fold ingredients together until just mixed.
Place mixture into muffin trays (I use paper cases to avoid sticking issues). Bake 180C for about 20-25mins until browned. Enjoy!!
The amounts of cheese, bacon etc can be increased depending on your taste.
