Pumpkin Bisque

Creamy, rich pumpkin soup!


    1/2 med. onion

    2 clove garlic

    4 tbsp. butter

    2 tbsp. extra virgin olive oil

    2 c. pumpkin puree, canned

    1 1/2 c. chicken stock

    1/4 tsp. cinnamon

    sea salt & black pepper to taste


Melt butter and olive oil in pan. Add onions, and saute until translucent. Add garlic, and saute until fragrant. Add pumpkin puree, and cook, stirring frequently, until it begins to bubble. Add chicken stock. When mixture is hot and bubbling, transfer to food processor or blender (or use a hand held blender) to turn the mixture into a creamier, soupy consistency. When mixture is smooth, pour back into pan. (You can add water to achieve your desired consistency.) Season with cinnamon, salt, and pepper. Enjoy!
