El Salvadoran Cabbage Salad

This make ahead cabbage salad goes well with fish or any meat dish as a side. It is very simple and delicious.


  • 1 med. cabbage
  • 1 sml. onion
  • 1/2 tsp. dried oregano
  • 1 tsp. extra virgin olive oil
  • 1 tsp. sea salt
  • 1/4 c. red wine vinegar
  • 1/4 c. water
  • 1/2 tsp. red bell pepper
  • 2 carrot


Blanch the cabbage in boiling water for 1 minute, drain, and place in a large bowl. Add all remaining ingredients to cabbage, and mix to coat. Cover and refrigerate for 2 hours. Stir again before serving.
