A hearty, protein infused version of mashed potatoes -- fills the stomach and is satisfying, good for "protein type" vegetarians. This recipe makes enough for two-three people.
First cut and boil the potato (I keep the skins on). When soft, drain and put in food processor. Add beans, mustard, cottage cheese, seasoning, and process until smooth.
Other versions: place processed "mashed" as above in casserole dish, top with sliced tomatos, and bake. Can also add feta cheese to original mix if desired.
*Vegetarians can count this as 4 protein and 1 carb.
