Tuscan Meatballs

Delicious easy meatballs full of flavor!!


  • 1 lbs. ground pork
  • 2 garlic
  • 1 lrg. yellow bell pepper
  • 1 1/2 fresh rosemary
  • 1/2 c. red onion
  • 2 lrg. egg
  • 1/2 c. almond flour
  • sea salt & black pepper to taste
  • 3 tbs. coconut oil
  • 6 oz. tomato sauce
  • 1 c. chicken stock


In a food processor, pulse the garlic, pepper, onion,and rosemary. Set aside. In a separate bowl, combine ground pork,almond flour, two eggs and vegetable mixture. Mix well until blended. Meanwhile in a frying pan, heat 3 tbs of coconut oil on medium heat. Brown meatballs (approximately 5-10 minutes). Add tomato sauce and chicken broth to the pan and cook approximately 20-30 minutes. Note: add stock as needed to ensure that liquid does not burn. Enjoy!
